Pannon Tokaj Eszencia 2005 - Alc.1.5% vol., 0.375litre
Price: £100/bottle incl. VAT

The Liquid Gold „VINUM TOKAJENSE PASSUM” it could not bemissed from the shelves of any pharmacy through centuries. Drink every day like one tea spoon only and keep it long in your mouth. This may be one of the finest dessert wines ever made in the world. So pure, ethereal and totally sensational, explosive on the palate, freakishly complex, lusciously sweet, yet with superb laser like sharp citrus juices which keeps it vibrant and mesmerising throughout. The finish is endless. There is so much going on here, flavours of pineapple, citrus, lichee, orange blossom, strawberries, dried apricot.
Honey contains 400 grams of sugar per litre, this contains a staggering 614 grams per litre!
It is totally extravagant, extraordinarily finessed, despite the massive residual sugars, this is superbly balanced by thrilling acids.
Eszencia (Essence) is not really a wine in the conventional sense, but rather a unique elixir, the quintessence of the grape, with an almost supernatural concentration of taste and aroma, especially if it is very high in sugars and lower in alcohol. It's something that every wine aficionado dreams of tasting at least once, and to do so is likely to be a life-enhancing and never-forgotten experience.

Bourgogne

Burgundy

Domaine Bernard Bonin - Mersault
Domaine Bernard Bonin is a 7 hectare estate, solely planted with Chardonnay that was re-invigorated in 1999 by Nicolas Bernard and Veronique Bonin. A natural approach to winemaking is utilized in order to respect the terroir and vintage, with hand harvesting and no weeding. After 18 months ageing - the exact date decided by the lunar calendar - the wines are bottled without refining or filtration.

Domaine Chevrot - Cheilly-les-Maranges
Situated at the very south of the Cotes d'Or, the Maranges appellation sits on clay/ calcereous soils with Jurrasic limestone subsoil. With 13 hectares of vines devoted to biodynamic viticulture, there is no lack of commitment at the family owned Domaine Chevrot. Purity is the aim, tempered with affordability - both are achieved - though the estate never rest on its laurels.  Average vine age here is 35 years, but the fact that some parcels are as old as 60 years, perhaps helps to ilustrate that there is nothing average about this estate, Pablo is currently the incumbent Chevrot, becoming the fourth generation to manage the estate when he took over from his father in 2002.

Bourgogne Pinot Noir - 2009/2010

Domaine David Duband - Chevannes

David's winemaking style is modern, emphasising clean ripe fruit, yet each wine clearly demonstrating its own individual character and giving a vivid expression of the qualities expected from its appellation.
Duband realises the quality of his wines is governed by the fruit he uses and so with his team he has steadily refined his approach in the vineyard, cutting yields, increasing selection, maintaining planting densities and adopting an increasingly organic approach. All moves aimed at maximizing fruit quality.

Pannon Tokaj - zsomBOR - 2011 Limited Edition

Pannon Tokaj, zsomBor, 2011, Limited Edition

Zefino had the chance to save 10 bottles from the 575 bottles made in 2011.

Every bottle is individually numbered on the backlabel.

zsomBor is a semi-dry Furmint with 11gr. of residual sugar, at 14,5 alc./VV. The grape was harvested at the end of October 2011, fermented for 28 days on marc, macerating and cooling permanently. After the maceration the wine had been aged for 3,5 months in Hungarian oak barrels. Bottles in March 2012, giving 3 months time for the bottle aging, personally I would still wait for 1-2 years before opening, it is a big white wine for gourmands!
Straw yellow colour, with a pronounced nose, showing green apple, strong quince and apricot at the end. Surprisingly from a white wine, zsomBor shows raspberries, blackberries, greengage plums, then apricots, melon, grapefruit, mango on the palate. Vivid acidity, elegant style with a long finish with roasted vanilla hints from the oak barrels.
This beauty has got a new, elegant design :
- bottled in 0,75 litre olivegreen Rhein-bottle, with glass cork (vino-lock),
- Silver metallic coloured label set, black aluminium capsule,
- Individual backlabel, with alphanumeric number.
Drink now or keep it for 5-6 years. We recommend to any kind of cheeses, salads, fish dishes, well seasoned white meats on 10°C.
With a fine cigar - after meal - is a great fun.

Testut

Domaine Testut's vineyards lie only on the finest Kimmeridgian limestone soils; the soils that give the most classic minerally crisp flavours to the wines. Viticulture is painstaking and follows the practice of "Lutte Raisonnée", using only minimal inputs in viticulture. The wines are fermented in a mixture of stainless steel tanks and cement vast. The Premier and Grand Cru wines spend several months ageing in oak with their fine lees.

American wine critic, Robert Parker has described Cyril Testut's Chablis as "excellent" and we can see why. These wines have both modern and classic facets to their style, being clean and fresh with a fantastic fruit purity but also having the fabolous crisp malic acid notes and touches of lees, oak and oxidative handling that define classic Chablis. Parker goes on to say: " The wines are among the very best of the region and offer great style and concentration. They neversacrifice their richness and depth, and remain extremely well balanced and filled with finesse."
We can't add much to that, as if we needed to!

Chablis "Rive Droite" 2012
Classic Chablis with modern facets - this is wonderfully pure, clean and fresh with thrilling fruit purity layered with touches of crispness, creaminess and handling.

Chablis 1er Cru "Montée de Tonnerre" 2012

Rated among the best Premier Crus, Montée de Tonnerre shares a similar aspect to the GRand Crus and produces wines to rival some of their grander cousins.
Price: £28/bottle or order your case of 6 for £156 = £26/bottle

Chablis Grand Cru "Grenouille" 2012
Robert Parker rates these wines" among the very best of the region" saying they "never sacrifice their richness and depth, and remain extremely well balanced and filled with finesse". What more can we say?
Price: £62/bottle or order 6 for £324 = £54/bottle
